Brown sugar syrup is a staple housemade syrup in many bubble tea cafes. A common use for the syrup is creating style and presentation for the drinks such as coating the glass with brown sugar syrup before adding ice, milk, and the main ingredient.
Another use for the syrup is combining it with tapioca pearls or tapioca balls. This helps the tapioca pearls from sticking with one another. You also won’t need to add sugar in your drink mixture because the tapioca pearls are already sweetened.
We love having brown sugar syrup at home because it makes creating a bubble milk tea or green tea drink at home easier. It also elevates the cafe like experience of consuming the drinks at home.
How to Make Brown Sugar Syrup
What you will need:
- Brown sugar
- Muscovado sugar
- Lemon or lime juice
Instructions:
Boil a cup of water and mix the brown sugar until dissolved. Heat another small pot and add the muscovado sugar. Wait until the sugar has dissolved and 1/3 tsp of lime juice to prevent the sugar from caramelizing. Then combine the brown sugar water to the melted muscovado sugar. Bring the mixture to a light boil and stir occasionally. Once the syrup thickens, turn off the heat and let it cool before serving.

Why do you add lemon or lime juice to the sugar?
Adding half a teaspoon of lemon or lime juice will help avoid the sugar from crystallizing.
How many servings can you do with this recipe?
We noticed we could do as much as eight to ten drinks, depending on how much syrup we add. We would use the syrup to coat the glass or combine it with the tapioca pearls. Sometimes we would make a latte. (Our new favorite! Sharing the recipe soon!)
How do you store the brown sugar syrup?
Store the brown sugar syrup in an airtight container and place it in your fridge once it has cooled down. This would ensure your syrup lasts for a month and possibly two if you made a big batch.
