Learn how to make a healthy Hawaii inspired Avocado Toast with Poached Eggs and Furikake for breakfast. It’s simply delicious, and it’s a must-try!
We were inspired to create our at-home version of the avocado toast with poached eggs after a visit from EggHead Cafe (a popular cafe in Honolulu). We went there with our friends to celebrate Zach’s birthday. We had a fantastic time, and their food menu was quite innovative and very delicious.
A lot of cafes and breakfast restaurants in Hawaii incorporates Furikake in their dishes. Having Furikake in the pantry is also a staple in many households in Hawaii.
However, Zach and I still have yet to expand our knowledge of the many uses of Furikake. We have only been using it on our Spicy Ahi poke bowls. We buy freshly made Spicy Ahi at Foodland or Food Pantry (local grocery store), and we make our poke bowls at home.
How to Make an Avocado Toast with Poached Eggs and Furikake
As much as we love a sweet breakfast such as smoothie and fruit bowls, we also enjoy making hearty, savory breakfast. Learn how to make this Hawaii inspired avocado toast for breakfast at home.
What you will need:
- Eggs
- Avocado
- Bread
- Olive oil
- Lemon/lime juice
- Salt and black pepper
- Furikake
Instructions:
Poached Eggs
Crack an egg into a small mesh sieve over a bowl to remove the liquidy egg whites. Bring a large pot of water to boil. Then add a tablespoon of vinegar into the water. Create a vortex in the water and drop the egg in the middle. Cook for 3 minutes and remove the egg with a spoon and dab dry.
Avocado Toast
Toast the bread on a stovetop with olive oil to give it some extra flavor. Take the avocado and mask it in a bowl with a fork. Add the lemon/lime juice, salt and black pepper. Then assemble everything and top with a little bit of black pepper and the right amount of furikake. Serve and enjoy!
What is Furikake?
Furikake is a Japanese seasoning. It’s usually made of sesame seeds, seaweed, salt, and sugar. It also comes in various flavors, but this is our favorite.
Where can I find Furikake?
You can find Furikake in the Asian or ethnic aisle of a grocery store. If not, you may need to go to the Japanese market. You can also order it from Amazon.

Avocado Toast with Poached Eggs and Furikake
Ingredients
Poached Eggs
- 2 fresh eggs
- 1 tbsp vinegar
Avocado Toast
- 2 slices bread
- olive oil
- 1 whole avocado
- 2 tsp lemon or lime juice
- salt
- black pepper
- furikake
Instructions
Poached Eggs
- Crack an egg into a small mesh sieve over a bowl. Wait until the liquidy egg whites have been removed. Then place the egg in a separate small bowl.
- Bring a large pot of water to boil. Once boiling, turn the heat to medium-low and stir a tablespoon of vinegar into the water.
- Drop the egg in the middle of the vortex and let it cook for 3 minutes. Then remove the egg with a spoon, dab dry to remove excess water and serve!
Avocado Toast
- Toast the bread on a stovetop with olive oil to give it some extra flavor.
- Take the avocado and mash it in a bowl with a fork. Add the lemon/lime juice, salt, and black pepper.
- Then assemble the toast, avocado, poached eggs, and top with a little bit of pepper and the right amount of furikake.
- Serve immediately and enjoy!
